Situated in Smithfield near the medieval church of St Bartholomew the Great, this Michelin-starred and Michelin Green-starred restaurant fuses heritage with modern sustainability.

What we did

A historically sensitive refurbishment using local materials (stone, wood, fabrics) to mirror Smithfield’s heritage. Features bespoke tables from fallen London Plane trees and in-house ceramics.

Key Features

  • Curved walls, specialized tiling, linen curtains
  • Views of the medieval St Bartholomew the Great church
  • Complex mechanical/technical demands

Client Collaboration

Founders Johnnie, Luke, and Toby emphasized local sourcing and sustainability. TRAK’s holistic approach matched their ethos.
